One Pot Veggie Pasta-YUMMY

Ingredients:

8 oz  whole wheat spaghetti

3 cups broccoli florets- (I love to fill my dishes with lots of fresh veggies like squash, cauliflower or asparagus)

1 can (14.5 oz) tomatoes, drained (do not drain if you like your pasta juicy)

1 can (15 oz) cannellini beans drained (you may want to rinse the beans under running water to wash away some of the salt)

2 Tbs. tomato paste

2 gloves garlic, finely chopped

1/4 tsp. salt

1/4 tsp. pepper

2 Tbs. chopped fresh parsley (used dried if that is all you have)

1/4 cup grated Parmesan Cheese

*Cook spaghetti as directed on package omitting salt and oil.  Add broccoli during last 3-5 minutes depending on how tender you prefer your broccoli.  Drain and return to the pot.

*Stir in tomatoes, beans, tomato paste, garlic, salt and pepper; cook over medium low heat until thoroughly heated.  Toss and stir in parsley.  Sprinkle each serving with 2 tsp. cheese.
