Farm-fresh veggies are low in calories, high in fiber and taste amazing. I go every week April through November. I don’t only love the veggies, I love mingling with the people especially the farmers. One farmer from Yuba City, CA gave me a bag of cauliflower greens one week. I was clueless on what to do with them. She knew I made soup each week and suggested I cut the greens up and put them in my soup pot. I thought she was a bit crazy but I tried it anyway. Oh my gosh, the greens were crunchy, a bit sweet and tasted fantastic. The cauliflower greens added additional vitamins and fiber to my soup. I try and get to know the farmers and ask them for ideas on what to do with their fruits and vegetables. I encourage everyone to check out their local farmers markets and add new fruits vegetables to your meals and snacks.
